Beef Liver with Caramelized Onions
500 g beef liver
1 clove of garlic
100 g corn flour
2-3 tablespoons olive oil
200 g balsamic vinegar
1 tablespoon honey
3-4 sun dried tomatoes
4-5 sprigs thyme, only the leaves
1 sprig rosemary , only the leaves
Wash the liver and cut into 1-2 cm slices.
Cut the onion in half and then thinly slice.
Thinly slice the garlic and the sun dried tomatoes.
Dredge the slices of liver in the corn flour and tap with your hands to remove excess flour.
Place a pan over medium to high heat. Add the olive oil and let it get hot.
Add the liver and onions. Sauté for 2-3 minutes.
Stir with a wooden spoon, add the garlic and cook for 2-3 minutes on both sides.
Add the vinegar, honey, sun dried tomatoes and finely chopped aromatics.
Lightly stir and remove from heat.
Season with salt and pepper (sparingly since the sun dried tomatoes are salty).
