Beef Liver with Caramelized Onions


    • 500 g beef liver

    • 1 onion

    • 1 clove of garlic

    • 100 g corn flour

    • 2-3 tablespoons olive oil

    • 200 g balsamic vinegar

    • 1 tablespoon honey

    • 3-4 sun dried tomatoes

    • 4-5 sprigs thyme, only the leaves

    • 1 sprig rosemary , only the leaves

    • pepper

    • salt


    • Wash the liver and cut into 1-2 cm slices.

    • Cut the onion in half and then thinly slice.

    • Thinly slice the garlic and the sun dried tomatoes.

    • Dredge the slices of liver in the corn flour and tap with your hands to remove excess flour.

    • Place a pan over medium to high heat. Add the olive oil and let it get hot.

    • Add the liver and onions. Sauté for 2-3 minutes.

    • Stir with a wooden spoon, add the garlic and cook for 2-3 minutes on both sides.

    • Add the vinegar, honey, sun dried tomatoes and finely chopped aromatics.

    • Lightly stir and remove from heat.

    • Season with salt and pepper (sparingly since the sun dried tomatoes are salty).
