HONEY FIR VANILLA 460gr from TAYGETOS MOUNTAIN
The uniqueness of this honey becomes distinct as it is very viscous,with a whitish color and a distinct aroma,thanks to its color being called “Vanilla”. Its nutritional and biological value is very high since it is honey with high concentration in trace elements and low concentration in sugars (less than other honey, eg thyme, flowers). It also has beneficial properties in the treatment of cough and bad mouth as antiseptic. Honey from the fir trees of Taygetos is a well-known product for its taste and its harsh texture.It is a honey that does not come from the flowers but from a resin that produces some microorganisms on the fir tree. Its concentration in sugars is slightly less than other honey (for example, flowers or thyme), but what distinguishes it is that it never crystallizes because it has a very low glucose content of less than 30% even after years.
Light, reminiscent of candy or vanilla. It is unique all over the world and is produced only from the black fir of Mainalo and Taygetos mountain while the extraction of honey is extremely difficult and costly because it requires the destruction of the honeycombs.
Crystallization: Because of its low natural sugar content,Elat Vanilla honey does NOT crystallize at all and is the only one with this property among the other varieties of honey.
It stands out for its distinctive appearance,with the “golden” shades created inside it and its total pearly off-white color.That is why it is also called “Vanilla”.It is particularly viscous and tastes like caramel or vanilla.It is unique and one of the most rare in the world!Its rarity is, in addition to its particular appearance, difficult to extract from the honeycombs, as there are usually losses due to the destruction of the honeycombs. For this reason, we produce it in very small quantities.
In Greece, apiculture does not involve the intense exploitation of bees and organised monocultures of mass produced, low cost & low quality honey.
Greek apiculture in protected Natura 2000 regions allows bees to feed exclusively on pure pollen, far away from chemicals, pesticides & industrial zones.
Due to the dry climate of Greece, honey has low water content and therefore it is slightly processed.
This has as a result a more aromatic, more dense and richer in flavours and ingredients honey.
