Kourabies: a famous and delicious sweet that at the sound of its word we get festive images, flavors and aromas of Christmas.
Today, this festive cake has become synonymous – with melomakarona and diples – with the Christmas table.
Around mid-November, perhaps even earlier, bakeries and patisseries begin to smell of butter and roasted almonds, two of the four main ingredients of kourabie.
And the butter must be such (cow or goat) that it emerges harmoniously its aroma leaving a pleasant and balanced aftertaste. The almonds should be fresh, of exceptional quality and have been lightly roasted so that they also give their taste and crunch to the dessert.
Then the powdered sugar will come, in the dough but also as sprinkled on top, to offer its sweetness and the “body” to the kourabie.
Sometimes, as soon as the kourabies is unbaked, it is sprayed with a little flower water or brandy to further emphasize the aromas and to better stick the powder to its surface.
