Single-variety Robola distillate is like a great film. The script has existed for several years but the conditions of this particular “production” have now given us the fruit we were looking for. Very low acreage yield, controlled fermentation, slow distillation, are just a few of the things we considered necessary to complete these 930 bottles. Aromas of white flowers, freshly cut quince and ripe chestnut appear immediately in the glass. Cool and round mouthfeel, with a gentle sense of alcohol, highlighting elements of complexity such as pear, chestnut and the unexpected minerality that we find in the long aftertaste.
Great companion for both savory and sweet treats. In savory, a sea bass carp, a sea bream or sushi would be ideal choices along with cold finely chopped slices of beef or prosciutto with pineapple. In desserts the ideal match is a marron glacé, a walnut pie, a baklava with pistachio and a ravani. Can also be drunk plain as an aperitif.
