Thyme honey is a real treasure for our country. Honey is produced from the thyme plant where in this genus are found several species such as Thymus vulgaris, Thymus capitatus, Thymus striatus, Thymus atticus etc. Thyme is a native shrub that floods the Greek environment, starting from the coastal areas, continuing to the lowlands, reaching up to the mountains. It can exceed 30 cm in height and its flowers can be violet, blue or even white. It is a perennial plant, resistant to drought and grows in barren and stony soils. This is the main advantage of thyme, where it is fully acclimatized to the soil and climatic conditions of Greece. The annual Greek production of thyme honey amounts to about 10% of the total.

Thyme blooms either early or late, depending on the area where it grows, the species and the variety. Its fragrant flowers first appear in coastal places, at the end of May, and the flowering continues from the second fortnight of June. The total duration of flowering ranges from 30 to 40 days, depending on the season. However, the more durable the thyme as a plant, the more delicate its flower. Nectar secretion is favored by good rains in April, while rains at the time of full bloom and hot southwest winds have a negative effect on it.

Thyme honey is a separate and special category of flower honey. The word thyme alone foretells the value of this unique herb. It comes etymologically from the ancient Greek verb “θύω”, which among other things means to smell. The aroma it offers is exquisite, intense, where with a breath and a spoon we make a short trip to the seas and mountains of the Greek land. Its taste is strongly herbal, fruity where it sometimes leaves a burning sensation in the larynx, due to the high concentration of fructose. Its color varies from light brown, golden amber or reddish and is usually clear. The determining factor, which will shape its organoleptic characteristics, is the percentage of its pure composition, as depending on the flora of the area, the period of collection, nectar or honeydew, they will create a unique honey. Crystallization in thyme honey occurs slowly and can take place from 12 – 18 months.
