- Flower Honey – in the spring blooming slopes & plains of the Greek countryside, bees “mix – naturally” the nectar from a feast of wildflowers & wild herbs they encounter on their way, many of which are unique in the world. - Pine honey is produced exclusively in the Southeastern Mediterranean & of course in Greece. 65% of the total honey production in Greece is pine honey. With a not particularly sweet taste & a distinctive aroma, it is the most important beekeeping plant in Greece. Pine honey is collected from the pine forests of Arcadia in the Peloponnese and Evia at an altitude ranging from 800m. – 1300m. both in Spring (April – May) and Autumn (September – October). Spring pine honey is lighter in color, clearer & more aromatic than that produced in autumn. Due to its low glucose content, its crystallization occurs quite slowly (> 8 months). The nutritional value of Greek pine honey is based on the large number of different substances that coexist in its composition. A special place is occupied by trace elements, which are found in high concentrations in Greek pine honey, characterizing it as a honey with high nutritional value. - Heather Honey Susoura is a honey with particularly high nutritional value and is one of the best choices for stimulating the body. - In the virgin area of the famous oak forest on the Foloi plateau in Orini Ilia, one of the most unjustly-undervalued honeys of Greek nature (in terms of its reputation among consumers) is collected: oak honey. It is collected during the summer months from the end of June to the end of July. It is produced from the honeydew secretions of the oak tree (mainly the leaves) and results in a very dark, almost black and quite viscous honey with a wonderful caramel flavor which crystallizes very difficultly (over 12 months or even 18 months). - Fir – Parnonas Elatis honey belongs to the Melitoma category! Its color is light red, its taste is slightly sweet and its aroma is very light! This honey is collected on Mount Parnonas in Arcadia, during the summer season, between June and July! It is collected in the virgin fir forests of Parnonas in the Southeast of the Arcadia prefecture at altitudes of 800-1300 meters, in early summer (June to July).
